My sister Shannon is here visiting from Michigan right now and she requested I make these Shredded Beef Tacos! It was such a fun evening spending time together, eating and having a drink.

My Dad and Stepmom also stopped by for dinner and we ended the night with some yummy Mixed Berry Bellinis! Head over and check out the recipe, they are super delicious!

I cannot believe I haven't made these tacos since I've started blogging. They used to be on the dinner menu all the time. What other great meals have I forgot about? Since time flies, I know it's quite a few.

The beef is super easy to prep and they turn out so awesome! Everyone loved them and took the recipe home with them to try out again some other time.

It's a great change from Ground Beef Tacos when you are wanting something a little different and it feeds a crowd. If you want to make things easier, mix up some of this Mexican Seasoning ahead of time. You can use it instead of the spices I have listed in the recipe card.

This meal or the leftovers are great for taco salad, burritos, tostadas, nachos or quesadillas! It's also great when used in a breakfast recipe with some eggs. We love serving them with some of this Crock Pot Queso!

What is in Shredded Beef Tacos?

  • Bell pepper: The bell pepper comes in different colors including red, yellow, orange, green, white, and purple. Red peppers have the most nutrition, because they've been on the vine longest. Green peppers are harvested earlier, before they have a chance to turn yellow, orange, and then red. Red bell peppers have almost 11 times more beta-carotene and 1.5 times more vitamin C than green.
  • Onion: The onion is a vegetable that is the most widely cultivated species of the genus Allium. It's relatives include the garlic, shallot, leek, and chive. Onions contain antioxidants, red onions have the highest antioxidant amount. Onions produce the chemical irritant known as syn-propanethial-S-oxide. This irritant floats up from the chopped onion and causes tears. Chill the onion prior to chopping to reduce irritation.
  • Cumin: Part of the parsley family and native to southwestern Asia including the Middle East. The dried seeds are used as a spice, especially ground and can be found in Mexican recipes or curry powder.
  • Garlic: My love for garlic is real. I use it in almost everything I cook and I love the health benefits it offers. Garlic is part of the onion, leek and chive family. It's great for heart health and contains many vitamins and minerals.

This recipe is ready in these steps:

  • Combine cumin, chili powder, oregano, paprika, cayenne, salt and pepper in a bowl
  • Rub half of the spice mixture onto the roast
  • Place the roast in the slow cooker and add onion, garlic and diced pepper
  • Cook on low
  • Drain some of the liquid, shred beef and put back into the slow cooker
  • Mix in remaining spice mixture, cilantro and more salt and pepper
  • Cook on low until heated through

Slow Cooker Shredded Beef Tacos

Yield: 10-12 servings

Ingredients:

  • 3 pound beef roast
  • 1 onion, diced
  • 6 cloves garlic, minced
  • 1 green, red or yellow pepper, diced
  • 3 tablespoons cumin
  • 2 tablespoons chili powder
  • 1 tablespoon oregano
  • 1 1/2 teaspoons paprika
  • 1/2 teaspoon cayenne pepper
  • 2 tablespoons fresh cilantro, chopped
  • salt and pepper

Instructions:

  1. Combine cumin, chili powder, oregano, paprika, cayenne, salt and pepper in a bowl.
  2. Rub half of the spice mixture onto the roast.
  3. Place the roast in the slow cooker and add onion, garlic and diced pepper.
  4. Cook on low for about 8 hours.
  5. Drain some of the liquid, shred beef and put back into the slow cooker.
  6. Mix in remaining spice mixture, cilantro and more salt and pepper as needed.
  7. Cook on low for another 30 minutes, until heated through.
